Craving with this Foods

Lately, I've been craving adobong kangkong. I was so happy when I went to the Fil Store on week end I found kangkong there. I made this for lunch today. My babe dako didn't ate any of it because I cooked with some fish. I knew he's not gonna eat my kangkong adobo so I cooked meat adobo for him, see below he loved it. I marinated with soy sauce, onions, garlic and vinegar. Then, put them in the oven instead of cooking in the pan. He even ate some for dinner tonight so I skipped cooking eh! Happy Me!

Baked Shrimp with Tomatoes and Feta

This is our dinner tonight Baked Shrimp with tomatoes and feta:

1 tablespoon Olive oil
1 medium onion, diced (about 1 1/2 cups)
2 cloves garlic, minced(about 2 teaspoons)
2 14.5-ounce cans no-salt added diced tomatoes, with their juices
1/4 cup finely minced fresh flat-leaf parsley
1 tablespoon finely minced fresh dill
1 1/4 lbs medium shrimp, peeled
1 1/4 teaspoon salt, plus more to taste
1/4 teaspoon freshly ground black pepper, plus more to taste
2/3 cup crumbled feta cheese(about 3 ounces)

Preheat the oven to 425 temp.
Heat the oil in an ovenproof skillet over medium-high heat.
Add the onion and cook, stirring, until softened, about 3 minutes, then add the garlic and cook for 1 minute. Add the tomatoes and bring to boil.
Reduce the heat to medium-low and let simmer for about 5 minutes, until the tomato juices thicken. Remove from the heat. Stir in the parsley, dill and shrimp and season with salt and pepper. Sprinkle the feta over the top. Bake until the shrimp are cooked though and the cheese melts, about 12 minutes.

Promise! this is the meal you'll make it over and over. You may served this over cooked rice. However, instead of rice we served this with pasta and garlic bread as you can see above-:) Opss I missed the pasta I wasn't able to take a pic of it-:)

Foods On Week End

Today was very rainy and then when the rain stopped it got really windy. My gosh I never saw it so windy! Since I stayed inside most of the day today we decided to eat some dinner out late. Usually, we are in bed at the time we ate dinner. We ate dinner at Sakura a very classy Japanese restaurant in town. It was the second time I ate there since I've been here.
My Babe Dako ordered some sushi which I did not care to eat any of it. I got a Chicken Teriyaki Bento box. First, they served us some salad with a ginger dressing. I liked it a lot. Then, we had some Miso Soup which was very tasty since I was craving some soup, my Babe Dako didn't bother to taste the soup they have served he said it was fishy lol.
With my dinner in the Box they had a lot of things. First, chicken with veggies, a ball of white rice, some California rolls, tempura shrimp and veggies and a sweet dumpling. I really liked the dumpling very tasty. Now it is sooooooo late but we are up watching TV and blogging. Over all not a bad day.

Week End Shopping Spree

On Saturday my husband and I ate our breakfast in IHOP (International House of Pancakes). I loved it there they had a lot of selection of foods.
I ordered the Steak Omelette. It came with a side of pancakes. It had all different kinds of meats, sausage, bacon, tomato, cheese, mushrooms, green onions, and a side of salsa. I ate the whole thing by myself and that is why I am so big hehe. Well not really I still very small. It was a nice breakfast though, plus I had some orange juice. We did not even eat lunch and we ate dinner very late because we were so full. My Babe Dako ate a chicken and spinach crepe with Hollandaise sauce on top. It was pretty good too. I ate some of both. Overall, we had a very nice breakfast.

After breakfast we went shopping and I got some new shoes. I love them they are comfortable. My favorite thing to shop for is shoes... just like Emelda Marcos hehe but right now I only have about 30 pairs of shoes. I think in time I can get several thousand pairs like my hero Emelda. We shall see-:)

The next day we went to the outlets to find some pans. We bought two new pans. Here is the porcelain Dutch Oven because I burned all the old pans so they were black. Now I have blue one and it is pretty. We will see how long they stay nice.

What's For Dinner?

I am having a very lazy afternoon spent most of my time in front of the computer. When my husband got home he asked me what's for dinner? Gesshh I feel I am regularly responsible to make dinner if were not going to eat outside. Well, he's not that lazy guy, sometimes we cook together in fact, he's a better cook that I do. The funny thing was, when I was in the bathroom took my shower first, he cooked the pork chop and was completely burned. Guess what happened? He thought, the stove has greased on it and the fire blow up or he might just turned on the fire in a very high heat lol. When I got out from the shower I was like what????? To be honest, I cannot leave him cooking alone hehe I just can not help not to be with him when he does something in the kitchen. How sweet-:)!
Hmmm the pork chop was not that bad but, I decided to make my own version of the salad besides the sweet potato mum in law gave me. So, we had some pork chop, sweet potato and salad for dinner-:)

How did I make my own version of salad? Wooo.. I cannot explain how easy it was to prepare/ make a salad. I enjoyed chopping all the ingredients. I included in my salad the following ingredients; 3 eggs, lettuce, cucumber, carrots, apple, grapes, broccoli, cauliflower, red and green peppers, tomatoes, walnuts, croƻtons and ranch dressing.
First, I boiled the eggs. Allowed to cool in cold water. Then, peeled and cut into quarters, or slice in thick slices. Cut the lettuce head in half. Rinsed the lettuce under cold water and allow to drain. Cut the tomatoes. Peel and slice cucumbers and slice the apple, red and green peppers. Grated the carrots.

I mixed all the ingredients in a big bowl and added some ranch dressing on the top of the salad hmmmm yummy.

Well, don't worry if you missing one of the ingredients. Each of us has a different version of making the salad so it is slightly different for an individual. My husband loved my own version of salad. After dinner our plates was empty hmmm...
