Yummy Lunch!

Here's our lunch today. I cooked Chicken Afritada. My Babe Dako loved it. Yummy!
The following are the ingredients I used good for 2 people:
1 1/2 lbs chicken, cut into pieces
1 potato, peeled and cut into cubed
1/2 cup peas
1 cup, diced carrots
1/2 red onion, diced
1 head garlic, minced
1/2 red bell pepper, sliced into strips
1/2 green bell pepper, sliced into strips
1 cup chicken broth
1 small can tomato sauce
2 tablespoons of veges oil

Cooking Instructions:
1. In a cooking pot, heat the oil.
2. Saute garlic and onions.
3. Add the chicken and slightly brown.
4. Pour the chicken broth and tomato sauce.
5. Bring to boil and allow to simmer for 10 minutes or until the chicken is almost cooked.
6. Add the potatoes and carrots to continue cooking for another 10 minutes or until the carrots and potatoes are cooked. Add the peas, green and red bell peppers, simmer for an additional 3 minutes.
7. Little bit of salt and black ground pepper to taste.
8. Served with rice.
Hmmm.. yummy! Our plates was empty-:)
